क्या आपको पिज़्ज़ा, बर्गर जैसे बाहर का खाना अच्छा लगता है? क्या आप हर दिन जंक फ़ूड खाते हैं?

हर किसी मनुष्य के लिए एक अच्छा स्वास्थ्य एक अच्छे जीवन को जीने के लिए बहुत ही जरूरी होता है। एक अच्छे स्वास्थ्य के लिए प्रतिदिन अच्छा पौष्टिक भोजन और अच्छी आदतों का होना बहुत आवश्यक होता है।

आज के आधुनिक युग में लगभग सभी लोग जंक फूड खा रहे हैं क्योंकि यह बहुत ही स्वादिष्ट होते हैं, आसानी से हर जगह उपलब्ध होते है और कम दाम में भी मिलते हैं। पहले लोग जंक फ़ूड को कभी-कभी ही बाहर जाने पर खाया करते थे पर अब धीरे-धीरे लोग इसे अपने हर दिन का खाना बनाते जा रहे हैं जिसके कारण लोगों को कई प्रकार के स्वास्थ्य से जुडी मुश्किलों का सामना करना पड़ रहा है।

जंक फ़ूड क्या होता है? What is Junk food in hindi?

जंक फ़ूड में बहुत ज्यादा कैलोरी की मात्र होती है और विटामिन, प्रोटीन और मिनरल की मात्रा बहुत अधिक होती है। विटामिन और मिनरल जरूरत के अनुसार ही शरीर के लिए सही है। अगर आसान शब्दों में हम जंक फ़ूड का वर्णन करें तो यह मनुष्य के शरीर के लिए लाभदायक कम और हानिकारक ज्यादा है।

इस बाहर में मिलने वाले ज्यादा कैलोरी वाले खाना का नाम जंक फ़ूड (Junk Food), माइकल ऍफ़ जकोब्सन ने साल 1972 में पहली बार दिया। देखने में जंक फ़ूड जितना सुन्दर होता है उतना ही ज्यादा यह शरीर के लिए खतरनाक होता है।

आज के दिन में बच्चों से लेकर बड़ों तक हर कोई व्यक्ति जंक फ़ूड खाने की आदत बना चुके हैं। अब जंक फ़ूड हर गली-मोहल्ले में मिलने लगा है और जन्मदिन या विवाह पार्टी का यह एक ज़रूरी हिस्सा बन चूका है।

जंक फ़ूड के कुछ मुख्य उदाहरण हैं कोल्ड ड्रिंक, नूडल, बर्गर, पिज़्ज़ा, चिप्स, नमकीन, मंचूरियन, समोसा, पकोड़े, केक, आइस-क्रीम, चॉकलेट, आदि। ऐसे ही और कई प्रकार के जंक फ़ूड आज हर जगह मौजूद हैं। इनमे से किसी भी प्रकार के जंक फ़ूड में पौष्टिक तत्व नहीं है जिससे शरीर को कुछ लाभ मिले।

जंक फ़ूड खाने के परिणाम Effects of eating junk food in hindi

एक बात तो साफ़ है ज्यादा और लगातार जंक फ़ूड खाने से कई प्रकार के स्वास्थ्य प्रोब्लेम्स होते हैं। चलिए जानते हैं जंक फ़ूड के सेवन से शरीर को किन मुश्किलों का सामना करना पड़ सकता है?

वजन बढना या मोटापा होना Obesity or Weight gain

घर में बनानें वाले भोजन या अनाज में बहुत कम कैलोरी की मात्र होती है। जबकि फ़ास्ट फ़ूड / जंक फ़ूड को बनाने में हर जगह बार-बार तेल, घी, बटर का उपयोग होता है जो शरीर के लिए कुछ हद तक ही ज़रूरी होता है।

दूरी बात आज के लोग अब पुराने ज़माने के लोगों जितना काम में पसीना नहीं बहाते हैं जिसके कारण वही तेल,घी या चर्बी युक्त भोजन उनके मोटापा का कारण बन जाता है और आप सब तो जानते हैं मोटापा शरीर में और कई प्रकार की बिमारियों का कारण बनता है।

जंक फ़ूड या फ़ास्ट फ़ूड में सबसे ज्यादा नमक का इस्तेमाल होता है। घर में बने हुए भोजन में हम ज़रुरत के अनुसार नमक की मात्रा का उपयोग करते हैं परन्त बाहर जंक फ़ूड में ज़रुरत से कई ज्यादा नमक की मात्रा मिलाई जाती हैं। आप लोगों को यह तो पता ही होगा ज्यादा नमक के सेवन से हाइपरटेंशन हो सकता है और हाइपरटेंशन के रोगियों की हालत बहुत बिगड़ सकती है।

टाइफाइड Typhoid

जब आपके घर में आपकी माँ या पत्नी खाना बनाती है आपने देखा होगा वह सब्जियों, दाल, चावल को पहले कितना साफ़ से धोते और छांटते हैं। सड़े-गले सब्जियों को फैंक देते हैं और स्वच्छ तरीके से खाना बनाते हैं।

आपको क्या लगता है होटलों और फ़ास्ट फ़ूड सेंटर पर मिलने वाले जंक फ़ूड भी उतने ही स्वच्छ तरीके से बनाये जाते होंगे? जी नहीं ! एसा नहीं होता है। बहार मिलने वाले जंक फ़ूड सबसे ज्यादा गंदे या अस्वच्छ तरीके से बनाये जाते हैं जिनसे टाइफाइड, और डायरिया होने का खतरा रहता है।

ह्रदय से जुड़े रोग Heart Diseases

जंक फ़ूड को बनाने के लिए सबसे ज्यादा तेल का उपयोग किया जाता है। घर के भोजन में जरूरत के अनुसार हम तेल का उपयोग करते हैं। ज्यादा तेल और घी युक्त भोजन करने से शरीर में कोलेस्ट्रॉल की मात्रा बढ़ने का खतरा रहता है। इससे कई प्रकार के ह्रदय रोग होने का खतरा रहता है और ह्रदय के रोगियों के लिए जंक फ़ूड का सेवन करना जानलेवा साबित हो सकता है।

कुपोषण Malnutrition

एक बात तो सच है जंक फ़ूड खाने में बहुत स्वादिष्ट होते हैं और भूख भी अच्छे से मिटाते हैं। लम्बे समय तक बिना पौष्टिक तत्वों वाले – फास्ट फूड या जंक फ़ूड पर निर्भर रहने वाले व्यक्तियों का भूख कम हो जाता है जिससे उनकी इच्छा घर का पौष्टिक खाना न खा कर जंक फ़ूड खाने की इच्छा करते हैं।

इससे लोगों को कुपोषण जैसे स्वास्थ्य मुश्किलों से गुज़रना पड़ सकता है। बच्चे कुपोषण का सबसे ज्यादा शिकार होते हैं क्योंकि जंक फ़ूड के कारण उनका विकास सही प्रकार से नहीं हो पाता है।

अंत में हम बस इतना कहना चाहते हैं जंक फ़ूड एक महीने में एक बार ठीक है पर इसकी आदत बना स्वयं के शरीर को स्वयं बर्बाद करना है। इसलिए घर का स्वच्छ, स्वस्थ भोजन खाएं और निरोगी जीवन व्यतीत करें।

वर्तमान समय में लोग तेज़ी से फास्ट फूड की तरफ आकर्षित हो रहे हैं। स्थिति ये है कि जो फास्ट फूड 90 के दशक में भारत में बस आया ही था वो आज हर गली नुक्कड़ का हिस्सा बन चुका है। कहीं भी नज़र डालें फास्ट फूड के ठेलों और दुकानों की कतारें नज़ार आएंगी। इतना ही नहीं इन सभी दुकानों में भीड़ की कोई कमी नहीं होती।

सप्ताह के हर दिन यहां उतने ही ग्राहक उमड़ते देखे जा सकते हैं जितने की वीकेंड पर। हालांकि फास्ट फूड स्वाद से भरपूर होता है पर इसके खाने से होने वाले नुक्सान की लिस्ट हर कोई गिना सकता है। कभी-कभी फास्ट फूड खाने से आपके स्वास्थ्य पर प्रतिकूल प्रभाव नहीं पड़ता है लेकिन जहां आप लगातार बर्गर और फ्राइज़ खाने लगते हैं, वहां समस्या बढ़ जाती है।

जो लोग नियमित रूप से फास्ट फूड खाते हैं, वे अक्सर सिरदर्द से पीड़ित होते हैं, दांतों में तकलीफ का अनुभव करते हैं, उनका वजन बढ़ जाता है और बीपी और कोलेस्ट्रॉल का स्तर भी बढ़ जाता है। पर ऐसा नहीं है कि फास्ट फूड आफको सिर्फ नुक्सान ही पहुंचा सकता है। इसके कुछ लाभ भी हैं।  

1. फास्ट फूड खाना छोड़ने के बजाय देता है कुछ खाने का विकल्प

हालांकि इन दिनों लोग इंटरमिटेंट फास्टिंग के ज़रिए वज़न कम करने की कोशिश कर रहे हैं पर और यह एक लोकप्रिय तरीका बन गया है। पर ज़रूरी नहीं कि आप भी इस रेस में शामिल हों। कई बार ये तरीका आपको सूट नहीं करता है। ऐसा भी हो सकता है कि आपको वज़न घटाने की ज़रूरत ही ना हो। ऐसे में खाना स्किप कर देना एक अस्वस्थ आदत मानी जाती है। जानकार मानते हैं कि वजन कम करने का सबसे अच्छा तरीका है कि आप अपने द्वारा उपभोग की जाने वाली कैलोरी की संख्या को कम करें। इसके साथ ही व्यायाम के माध्यम से अतिरिक्त कैलोरी को जलाएँ। भोजन छोड़ना इसका विकल्प नहीं हो सकता क्योंकि इससे आपको थकान हो सकती है। साथ ही आप कुछ आवश्यक पोषक तत्वों को खो देते हैं। इसलिए आप फास्ट फूड खाएं पर कोशिश करें कि एक स्वस्थ फास्ट फूड का चयन करें। स्वस्थ फास्ट फूड से मतलब है कि ऐसा भोजन जिसमें तेल मसालों का प्रयोग कम किया जाता हो।  

2. फास्ट फूड समय की बचत करेगा

जानकार मानते हैं कि एक औसत परिवार जिसमें पति पत्नी दोनों ही काम पर जाते हैं वो सिर्फ घर के काम काज औऱ दिन भर की गतिविधियों को प्रबंधित करने में लगभग दो घंटे बिता रहा है। इसका मतलब है कि घर पर खाना बनाने के लिए बहुत कम समय हो सकता है। चूंकि फ़ास्ट फ़ूड उद्योग लगभग हर जगह उपलब्ध है, इसलिए आप अपने शेड्यूल को प्रबंधित करने के साथ ही आसानी से भोजन का इंतेज़ाम भी कर सकते हैं। यदि आप घर पर लंच या डिनर बनाने की कोशिश करते हैं तो ज्यादा समय लगता है।पर फास्ट फूड को चुनने में 50% कम समय लगता है। आज की भागती दौड़ती ज़िंदगी में जितना समय भी बच सके वो आप खुद के आराम औऱ परिवार के साथ बिताकर उसका उपयोग कर सकते हैं।

3. फास्ट फूड कीमत में कम होते हैं

फास्ट फूड आइटम अनी कम कीमतों की वजह से भी काफी लोकप्रिय हैं। आप अपने बजट के हिसाब से फास्ट फूड का चयन कर सकते हैं। ये उन लोगों के लिए आसान विकल्प है जिनके पास खाना पकाने का विकल्प मौजूद नहीं है या फिर सीमित संसाधनों में उन्हें अपना पेट भी भरना है। हालाँकि आप हर दिन तीन फास्ट फूड खाना नहीं खाना चाहेंगे, लेकिन कम दामों में मिलने वाला ये भोजन ना सिर्फ पेट भर शरीर की ज़रूरत के हिसाब से ऊर्जा पैदा करने के लिए काफी होता है। यदि आप खाने के लिए जैविक और ताजा उपजे उत्पादों को तरजीह देते हैं तो उसके लिए आपको काफी अधिक कीमत भी चुकानी पड़ती है।एक कम आमदनी वाले परिवार के लिए बाहर खाना वास्तव में सबसे सस्ता विकल्प हो सकता है।

4. आप हर बार बेहतर सेवा की उम्मीद कर सकते हैं

जब आप घर में खाना बनाते हैं तो कई बार खाना अच्छा बनता है पर कई बार खराब भी बन जाता है। पर जब आप फास्ट फूड आर्डर करते हैं तो आप हर बार अच्छे खाने की उम्मीद कर सकते हैं। आजकल हर जगह कई अंतर्राष्ट्रीय श्रृंखलाएं भी मौजूद हैं जो कम दामों में अच्छा औऱ आपकी पसंद का खाना परोसती हैं। खाने कते स्वपाद के साथ आपको उत्कृष्ट सेवा भी प्रदान की जाती है जैसे खाना समय से पहुंचे और आपको मिलने तक उसकी गर्माहट बनी रहे।  

5. बड़े फास्ट फूड उद्योग देतें हैं पोषण की पूरी जानकारी

हालांकि ये माना जाता है कि फास्ट फूड में कैलोरी बहुत अधिक होती हैं।पर सच्चाई ये भी है कि अगर आप किसी वेश्विक रेस्तरां से खाना मंगवाते हैं तो  वे खऱाने में मौजूद कैलोरी की गणना प्रदान करते हैं ताकि आप अपने खाने के बारे में एक स्मार्ट निर्णय ले सकें। पोषण संबंधी जानकारी की पूरी खाने के पैकेट पर उपलब्ध कराई जाती है। यही नहीं ये जानकारी आपको उनकी वेबसाइट पर ऑनलाइन भी मिल जाएगी। इसका मतलब है कि फास्ट फूड उद्योग से ऑर्डर करने के लिए आप क्या चुनते हैं, इसके बारे में एक अच्छा विकल्प चुनने के लिए आपके पास जानकारी मौजूद होती है।

6. फास्ट फूड में भी हैं स्वस्थ विकल्प

यदि आप फास्ट फूड को चुनते हैं तो ज़रूरी नहीं कि आप अधिक कैलोरी का सेवन कर रहे हों। ऐसे कई रेस्तरां हैं जो आपको मेनू पर स्वस्थ विकल्प प्रदान करते हैं ताकि आप अपने स्वास्थ्य के हिसाब से विकल्प चुन सकें।रेस्तरां आपको मैदे की जगह आटे की ब्रेड या बन का विकल्प देते हैं। इतना ही नहीं कई बार तो मैदे की जगह मल्टीग्रेन औऱ अलसी जैसे विकल्प तक मौजूद होते हैं जो आपके खाने के स्वस्थ बनाते हैं। आपकी ज़रूरत के हिसाब से वसा में कमी भी जा सकती है। आप वसा की जगह अधिक सब्ज़िया जैसे गोभी, गाजर,सलाद के पत्ते आदि को चुन सकते हैं। ऐसे में आप अपने शरीर की आवश्यकता के हिसाब से खाना चुनिकर फास्ट फूड को भी हेल्दी बना सकते हैं।

7.  कम दामों में स्मार्ट औऱ संपूर्ण आहार

फास्ट फूड में स्वस्थ कल्प भी मौजूद होते हैं। ऐसी कॉम्बो मील के विकल्प मौजूद होते हैं जो आपको कम खर्च में सम्पूर्ण भोजन मुहैया करा सकते हैं। यदि आप कुछ समय पहले से अपने ऑर्डर की योजना बनाते हैं तो आप ऐसे स्मार्ट विकल्प चुन सकते हैं जो बहुत किफायती हों औऱ जिनमें उच्च गुणवत्ता वाले खाद्य पदार्थ शामिल हों। सैंडविच ऑर्डर करते समय मेयोनीज़ को हटाने का अनुरोध करें या फिर प्रोसेस्ड चीज़ की जगह पनीर के इस्तेमाल पर ज़ोर दें।एक कॉम्बों मील चुनने पर एक हेल्दी सैंडविच एक साइड विकल्प औऱ एक हेल्दी ड्रिंक मंगा सकते हैं।

8.  नए विकल्पों का अनुभव और किफायती तरीका

जब हम फास्ट फूड विकल्पों के बारे में सोचना शुरू करते हैं, तो आम तौर पर बर्गर, सैंडविच ,पिज़्जा या चाउमिन जैसी चीज़ें ही दिमाग में आती है। पर संस्कृति  ,हर देश में फास्ट फूड के अपने विकल्प होते हैं। यदि आप इन खानों के अलावा ऐसे विकल्प तलाशें जो दूसरे देशों और समुदायों से आपको रूबरू करा सकते हैं तो इससे बेहतर क्या होगा। किसी देश का सूप आपको अच्छा लग सकता है तो कहीं का डेज़र्ट।आप कम दामों में  कभी चाइनीज़ तो कभी  मैक्सिकन और भी इटैलियन व्यंजनों का स्वाद ले सकते हैं।

इतालवी आइटम नियमित रूप से उसी गति से उपलब्ध होते हैं जैसे बर्गर जॉइंट ऑफर करता है।

फास्ट फूड के होते है नुक्सान भी

हमने आपको फास्ट फूड से होने वाले कई फायदों की जानकारी दी पर इनसे होने वाले नुकसान से भी इंकार नहीं किया जा सकता। अधिक तैलीय फास्ट फूड खाने से आपका कोलेस्ट्राल बढ़ सकता है जो हाई बीपी औऱ हृदय रोग का कारण बन सकता है।इसके अलावा अधिक मसालों औऱ मैदे के इस्तेमाल के कारण फास्ट फूड कई बार आपके पाचन के लिए समस्या खड़ी कर देता है। इनमें कार्बोहाइड्रेट की मात्रा अधिक होती है। ऐसे में ये शरीर में शुगर लेवल को भी बढ़ा सकता है। लगातार फास्ट फूड खाने से आप अधिक कैलोरी का सेवन कर सकते हैं जो मोटापे का कारण बन सकता है।

ऐसे में फास्ट फूड खाने वालों को यही सलाह दी जाती है कि वो अपने विवेक का इस्तेमाल कर खाने का चुनाव करें। अगर आपको किसी तरह कि परेशानी का अनुभव होता है तो चिकित्सक से सलाह अवश्य लें।

Essay 1- 

Fast food has steadily become an intrinsic component of our daily lives, and while it keeps attaining popularity, there is a need to review its advantages and disadvantages. 

We cannot deny that fast food ushers in lifestyle ailments and health problems for its consumers and society. Fast food contains lipids in excessive amounts, which are harmful chemical substances that people should ideally stay away from. With the growing consumption of fast food, people keep adding more lipids to their bodies, leading to obesity and a lower inclination towards exercising and physical activities. Eating excessive fast food also increases blood cholesterol levels (bad cholesterol) and causes major ailments like heart disease. 

While it has its clear disadvantages, fast food has still attained more popularity owing to its widespread benefits. In modern times, with hectic schedules to meet, most people lack the time and energy to prepare home-cooked meals. They consume fast food conveniently at competitive prices, offering sufficient nourishment and energy to sustain long working hours. At the same time, fast food has a unique and compelling taste that stimulates food lovers to indulge it. Fast food is also prepared hygienically in most cases while being a blessing for busy working people who barely have time to sit down and eat their meals, let alone prepare them! Studies have also shown that consuming fast food in smaller amounts periodically can boost immunity and enhance the appetite of individuals. Many fast foods also incorporate healthier items, including vegetables, herbs and even salads, which ensure some minerals and vitamins in the daily diet. 

Thus, it can be concluded that fast food has its own set of advantages and disadvantages though the onus to regulate consumption rests with consumers. While fast food offers great taste and convenience, it does bring health issues in the long run. Hence, regulating consumption and adopting a balanced approach is the best solution in this regard. Fast-food consumption has increased exponentially in recent years. Many people encourage fast food consumption, stating that it offers better taste, enhances the appetite, and comes with certain healthy ingredients. At the same time, another cross-section warns of the impending health issues sparked by excessive consumption of fast food, including higher blood cholesterol, obesity, and heart disease. It is important to discuss both arguments objectively to conclude. 

There are numerous advantages of fast food that cannot be ignored. Firstly, fast food can be consumed easily since it is prepared quickly and sold almost everywhere. Secondly, many people do not have sufficient time to prepare meals at home. They depend on readily available and pocket-friendly fast food for their daily dose of energy and nutrition. At the same time, it is not always the case that fast food companies use only unhealthy ingredients. Many fast food items make use of healthy vegetables, organic elements, herbs, and other ingredients at times. Thirdly, fast food consumers vouch for the riot of flavours that enrich their taste buds, thereby increasing their appetite and inculcating a love for food in their minds. 

However, the disadvantages of fast food cannot be ignored. Fast food is often prepared with unhealthy lipids and fats, which we unknowingly keep adding to our bodies. Fast food can make us overweight or obese while leading to issues with blood cholesterol, heart ailments and more. Fast food can sometimes impact the liver as well. It has also led to the slow death of many home-cooked recipes that have been consumed traditionally across households. 

To sum up the argument, fast food has its drawbacks and advantages. The best way out is to consume fast food in limited amounts every month for starters and emphasize on preparing healthy home-cooked meals with fresh ingredients. The Government and other authorities can also consider implementing minimum health standards to make fast food less harmful from a long-term perspective. (320 words)

On the bright side, the availability of fast food is a boon to the working population as well as people who live alone away from home. Nowadays, it is quite common for spouses to go outside to work. Consequently, the easy access to these foods makes life easier for them as they juggle their office and home chores . Moreover, these convenience foods are economical and delectable if bought from appropriate places. Therefore, they are the best alternatives for healthy food, which is sometimes exorbitant .

However, unbridled accessibility and consumption of fast foods have an array of adverse effects. Firstly, it affects the health of the consumer and raises the risk of cardiovascular diseases, dental problems, etc. Obesity is one of the major side effects of these foods. Secondly, the innumerable ways of obtaining fast food is making people sluggish . For example, due to online delivery options like Zomato, Swiggy, etc., people do not have to go out to eat. This makes them dependent on these apps and gradually, they give up cooking and become torpid . Lastly, overconsumption of fast foods can lead to mental issues like depression and anxiety, as argued by many scientific researchers. They claim as people are more inclined towards eating fast foods, they do not maintain a healthy lifestyle, which contributes to these issues.

In the end, even though fast foods are easy to cook, inexpensive and readily available, greater access to them certainly has more pitfalls than gains.

One of the primary advantages of greater access to fast food is convenience. Fast food restaurants are widely available, often 24/7, allowing people to grab a quick meal on their way to work or when they have a busy schedule.

This, in turn, makes the students lazy to cook fresh food even when they have time. They are also unable to adopt a home cooking culture in the future when they get families (Walker).

In conclusion, fast food is a modern technique that facilitates ready food when most needed. It is necessary for students to take into consideration their gains and drawbacks to ensure an effective lifestyle.

  • हरी सब्जियां और फलियां
  • मीट-मछली, पोल्ट्री उत्पाद
  • दूध उत्पाद जैसे – पनीर, दही

स्वस्थ आहार के फायदे अनेक हैं जिन्हें हम निम्नलिखित बिंदुओं के माध्यम से जान सकते हैं –

  • स्वस्थ भोजन करने से न सिर्फ आपका शरीर स्वस्थ रहता है बल्कि आपका दिमाग भी तेज होता है ( 2 )।
  • स्वास्थ्य के लिए अच्छा खाना खाने से शरीर मजबूत होता है।
  • स्वस्थ आहार हड्डियों को मजबूत रखते हैं।
  • पौष्टिक भोजन गर्भावस्था के दौरान एक महत्वपूर्ण भूमिका अदा करते हैं।
  • हरी-सब्जियां और फल मोटापा, कैंसर, डायबिटीज, ह्रदय रोग जैसी गंभीर शारीरिक समस्याओं से बचाव करते हैं। ( 3 )। खासकर वो खाद्य पदार्थ जिसमें फाइबर की अधिक मात्रा होती है।

पोटैशियम युक्त खाद्य पदार्थ के सेवन से ब्लड प्रेशर का खतरा कम हो सकता है ( 4 )।

नीचे हम आपके साथ स्वस्थ भोजन का आहार चार्ट शेयर कर रहे हैं, हालांकि यह आपके लिए एक उदाहरण के तौर पर साझा कर रहे हैं। इस चार्ट में बताए गए खाद्य पदार्थों में आप अपने अनुसार बदलाव भी कर सकते हैं।

नोट : यह सूची बस उदाहरण के तौर पर दी गई है, इसमें मौजूद खाद्य पदार्थ या उसकी मात्रा अलग-अलग व्यक्ति के स्वास्थ्य या उनके भूख पर निर्भर करती है। खाने के वक्त में भी बदलाव हो सकता है और बीच-बीच में कुछ अन्य चीजों का भी सेवन किया जा सकता है।

अब हम आपको कुछ पौष्टिक आहार के बारे में बताएंगे जिसे आप अपने हर रोज के डाइट में शामिल कर खुद को स्वस्थ रख सकते हैं।

स्वस्थ खाद्य पदार्थ की तालिका – Healthy Food List in Hindi

नीचे जानिए कुछ ऐसे स्वस्थ भोजन जो कि आसानी से बाजार में उपलब्ध हैं, जिसे आप अपने डाइट में शामिल कर खुद को सेहतमंद रख सकते हैं।

हरी सब्जियां – कई लोग खाने में हरी सब्जियां ज्यादा पसंद नहीं करते हैं लेकिन वो ये भूल जाते हैं कि इनसे उन्हें कितना फायदा हो सकता है। सब्जियों में मौजूद विटामिन, कैल्शियम, मिनरल, एंटीऑक्सीडेंट गुण शरीर को मोटापे, ह्रदय रोग के अलावा कई गंभीर बीमारियों से से बचाने का काम करते हैं। स्वस्थ जीवन के लिए दैनिक आहार में हरी-सब्जियों को जरूर शामिल करना चाहिए ( 5 ) ( 6 )।

फल – सब्जियों की तरह ही फल भी सेहत के लिए बहुत जरूरी है। डायबिटीज हो, ब्लड प्रेशर हो, कोलेस्ट्रॉल हो या वजन घटाना हो, फल आपकी मदद करेंगे। फलों में सेब, संतरा, आम और अपने पसंद का कोई भी एक या दो फल आप अपने खाने के रूटीन में शामिल जरूर करें। साथ ही इस बात का ध्यान रखें कि फलों का सेवन संतुलित मात्रा में किया जाना चाहिए ( 5 ) ( 6 )।

सूप – अपने डाइट में सूप भी जरूर शामिल करें, खासकर के तब जब आप अपने बढ़ते वजन से परेशान हैं। नियमित योग या व्यायाम के साथ अपने डाइट में सूप को शामिल करके आप मोटापे की समस्या से बचाव कर सकते हैं( 7 )। इसके साथ ही साथ कभी-कभी आप सूप को अपने एक वक्त के डाइट में भी ले सकते हो क्योंकि यह हल्का होता है।

सब्जियों का जूस – पोटैशियम, विटामिन, कैल्शियम युक्त सब्जियों के जूस को अपने डाइट में शामिल करें। विटामिन सी युक्त जूस से न सिर्फ शरीर की रोग-प्रतिरोधक क्षमता बढ़ाते हैं, बल्कि ये चोट और घाव को जल्दी भरने का काम भी करते हैं। आप गाजर, टमाटर व हरी सब्जियों के जूस को शामिल कर सकते हैं। सिर्फ जूस ही नहीं, बल्कि नारियल पानी जैसे पेय पदार्थ भी आपको सेहतमंद रखने का काम कर सकते हैं। नारियल पानी से शरीर ठंडा होता है और पेट संबंधी समस्याओं से काफी हद तक आराम मिल सकता है ( 8 ) ( 9 ) ( 10 ) ( 11 )।

फलियां और दाल – प्रोटीन, फाइबर और अन्य पोषक तत्वों से भरपूर दाल और फलियां रक्तचाप, मधुमेह जैसी घातक बीमारियों से रोकथाम का काम कर सकती हैं। इसलिए अपने दैनिक आहार में दाल और फलियों को जरूर शामिल करें( 12 )( 13 )( 14 )।

अनाज – चावल, गेहूं, दलिया, मकई , ब्राउन राइस जैसे अनाज और अनाज उत्पाद स्वास्थ्य के लिए जरूरी माने जाते हैं। ये शरीर में ऊर्जा की पूर्ति का काम करते हैं और आपको बीमारियों से बचाने का काम करते हैं। इसलिए जरूरी है कि आप अपने दैनिक आहार में रोटी, चावल और अन्य अनाज उत्पादों को शामिल करें( 15 )( 16 )।

दूध या दूध युक्त उत्पाद – दूध में कई तरह के पोषक तत्व जैसे – कैल्शियम, विटामिन ए, विटामिन बी 12, पोटैशियम, मैग्नीशियम, जिंक होते हैं। दूध हड्डियों को मजबूत बनाने से लेकर हृदय रोगों, टाइप 2 डायबिटीज, ब्लड प्रेशर जैसी बीमारियों से बचाव करने का काम करता है( 16 ), ( 17 )।

इसके साथ ही कोशिश करें आप कम फैट वाला या फैट फ्री दूध उपयोग करें क्योंकि हाई सैचुरेटेड फैट से शरीर हानिकारक कोलेस्ट्रॉल बढ़ने का खतरा हो सकता है। हालांकि यह पहले के शोध में कही गई बात है, अभी के नए शोध के में कुछ बदलाव हुए हैं जिसके परिणाम में यह कहा गया है कि फुल क्रीम दूध ह्रदय के लिए लाभकारी हो सकता है( 18 ), हालांकि इसपर मिलीजुली प्रतिक्रिया है। आपको अगर दूध न पसंद हो तो आप दूध युक्त उत्पाद जैसे – पनीर, चीज़ और अन्य सामग्रियों का उपयोग कर सकते हैं। हालांकि अगर आपको दूध से एलर्जी है तो आप उसके बदले सोया मिल्क, बादाम दूध का उपयोग कर सकते हैं( 19 ), ( 20 )। इसके अलावा डॉक्टर से भी इस बारे में बात कर सकते हैं।

अंडा – प्रोटीन, मिनरल, विटामिन, एंटीऑक्सीडेंट और ऐसे ही कई पौष्टिक तत्वों से भरपूर अंडा शरीर को न सिर्फ एनर्जी देता है बल्कि स्वस्थ भी रखता है। अंडा उन खाद्य पदार्थों में से एक है जिसमें प्राकृतिक रूप से विटामिन डी पाया जाता है। यह मनुष्य के दिमागी विकास में मदद कर संज्ञानात्मक (cognitive) समस्याओं से बचाव कर सकता है। कई बार उम्र के साथ यादादश्त कमजोर होने लगती है ऐसे में अगर आप चाहते हैं कि बढ़ती उम्र के साथ आपकी याददाश्त सही रहे तो अपने डाइट में अंडे को शामिल करना न भूलें( 21 )। अंडे का सेवन बच्चे, बूढ़े, जवान लगभग हर उम्र के लोग कर सकते हैं ( 22 )। हालांकि अगर किसी को ऐलर्जी की परेशानी है तो वो अंडे के सेवन से पहले एक बार डॉक्टर से राय लें।

मीट – हरी सब्जियों और फलों की तरह मीट भी स्वस्थ शरीर के लिए बहुत जरूरी है। इसमें न सिर्फ प्रोटीन होता है बल्कि इसमें जिंक भी मौजूद होता है, जो रोग प्रतिरोधक क्षमता में सुधार करता है, त्वचा को स्वस्थ बनाता है और प्रजनन स्वास्थ्य (reproductive health) को बरकरार रखने का काम करता है। इतना ही नहीं मीट में विटामिन बी 12 और ओमेगा-3 भी होता है जो तंत्रिका तंत्र (Nervous System) , ह्रदय और मस्तिष्क स्वास्थ्य के लिए उपयोगी हो सकता है( 23 )।

मछली – अगर आप अपनी डाइट में मीट नहीं शामिल करना चाहते हैं तो आप मछली का सेवन कर सकते हैं। देखा गया है कि जो बच्चे मछली का सेवन करते हैं उनमें दमा जैसी बीमारी का खतरा काफी हद तक कम हो जाता है। मछली में मौजूद ओमेगा-3 मस्तिष्क और दृष्टि के लिए फायदेमंद होता है। इतना ही नहीं मछली का सेवन अल्जाइमर जैसी भूलने की बीमारी के जोखिम को भी कम कर सकते हैं। मधुमेह के मरीजों में रक्त शर्करा को नियंत्रित करने में मछली का सेवन किया जा सकता है( 24 )। हालांकि हमेशा उस मछली का चुनाव करें जिसमें मरकरी कम मात्रा में हो क्योंकि ज्यादा मरकरी वाली मछली के सेवन नुकसानदायक हो सकता है।

सेब का सिरका – सेब का सिरका वजन कम करने में मददगार साबित हो सकता है। इतना ही नहीं यह ब्लड शुगर के स्तर को कम कर सकता है। हालांकि इसके सेवन के दौरान कुछ सावधानियां रखनी चाहिए और संतुलित मात्रा में इसका सेवन करना चाहिए( 25 )।

डार्क चॉकलेट – चॉकलेट का सेवन भी स्वास्थ्य के लिए फायदेमंद हो सकता है। अगर आपको हृदय रोगों से बचना है तो अपनी डाइट में डार्क चॉकलेट को शामिल करें। डार्क चॉकलेट में कई जरूरी पोषक तत्व मौजूद होते हैं जो हृदय को स्वस्थ रखने का काम कर सकते हैं। इस बात का ध्यान रखें कि डार्क चॉकलेट का सेवन संतुलित मात्रा में किया जाए( 26 )।

ये तो थे पौष्टिक आहार की सूची जिसे आप अपने डाइट में शामिल कर सकते हैं। इस लेख के आगे के भाग में हम आपको उन खाद्य पदार्थों के बारे में बताएंगे जिसे आपको अपने डाइट से हटाना या कम कर देना चाहिए।

खाद्य पदार्थ जो बिल्कुल नहीं खाने चाहिए – Foods to Avoid in Healthy Diet in Hindi

नीचे हम कुछ ऐसे खाद्य पदार्थों के बारे में बताने जा रहे हैं जिन्हें आपको डाइट से बिल्कुल हटा देना चाहिए और अगर आप उन्हें पूरी तरह हटा नहीं सकते तो कम से कम उसके सेवन सीमित कर दें।

तला-भूना खाना – तला-भूना भोजन शरीर के लिए घातक हो सकता है। तले-भूने खाने से ह्रदय संबंधी समस्या, मोटापा, मधुमेह और कई अन्य बीमारियां हो सकती हैं। इसलिए जितना हो सके इनसे दूर रहें और अगर आपको तला-भूना भोजन बहुत पसंद है तो आप घर का बना तला-भूना भोजन खा सकते हैं, जिसके लिए आप जैतून का तेल या सूरजमुखी के तेल का इस्तेमाल कर सकते हैं ( 27 ), ( 28 )। कोशिश करें कि इनके सेवन को सीमित करने की।

मीठे खाद्य पदार्थ – मीठे खाद्य पदार्थ जैसे मीठाई, आइस क्रीम, चॉकलेट लोगों के पसंदीदा होते हैं। लेकिन इनका अनियंत्रित मात्रा में किया गया सेवन शरीर के लिए नुकसानदायक हो सकता है। ज्यादा शुगर वाले खाद्य पदार्थ न सिर्फ मोटापा बढ़ाते हैं बल्कि डायबिटीज जैसी गंभीर बीमारियों का कारण भी बनते हैं। इसके अलावा ये आपके दांतों को भी खराब कर सकते हैं। इसलिए जरूरी है कि आप इनके सेवन को सीमित करें, ( 29 )।

जंक फूड्स – झटपट बनने वाले और आसानी से उपलब्ध बर्गर, पिज्जा, फ्राइज, पैटीज जैसे जंक फूड्स आज धीरे-धीरे स्वस्थ आहार की जगह ले रहे हैं। लेकिन इन पर बढ़ती निर्भरता आपके स्वास्थ्य के लिए घातक हो सकती है। ऐसे खाद्य पदार्थ मोटापे के साथ हृदय रोग, टाइप 2 डायबिटीज, कैंसर और लीवर से जुड़ी बीमारियों का कारण बन सकते हैं। इसलिए जितना हो सके जंक फूड्स के सेवन से बचें ( 30 ), ( 31 )।

कैफीन – चाय, कॉफी की आदत लगभग हर किसी को होती है। अक्सर लोग तनाव को दूर करने के लिए इसका सेवन करते हैं। लेकिन इनका अनियंत्रित मात्रा में किया गया सेवन स्वास्थ्य के लिए हानिकारक हो सकता है। चाय और कॉफी कैफीन युक्त होते हैं और शरीर में कैफीन की अधिक मात्रा से अनिद्रा, सिरदर्द, जी मिचलाना, उल्टी, चिंता जैसी समस्याएं हो सकती हैं। इसलिए जितना हो सके इन पेय पदार्थों का सेवन सीमित मात्रा में करें( 32 ), ( 33 ), ( 34 )।

चीज़, बटर, मायोनीज – जैसा कि ऊपर हमने बताया कि दूध उत्पाद जैसे पनीर, चीज़ का सेवन भी स्वास्थ्य के लिए जरूरी होता है। लेकिन इसमें आप ध्यान रखें कि चीज़, बटर, मायोनीज जैसे खाद्य पदार्थों का सेवन एक संतुलित मात्रा में कभी-कभी करें। बेहतर है लो फैट डेयरी प्रोडक्ट का उपयोग करें ( 35 )।

सॉफ्ट ड्रिंक – सोडायुक्त पेय पदार्थ या सॉफ्ट ड्रिंक पीने का चलन लगभग हर उम्र के लोगों में दिख रहा है। सॉफ्ट ड्रिंक की बढ़ती यह आदत स्वास्थ्य के लिए चिंता का विषय बन सकती है। दरअसल, इसमें मौजूद शुगर और कैफीन की मात्रा स्वास्थ्य के लिए हानिकारक हो सकती है। वैज्ञानिक शोध के अनुसार सॉफ्ट ड्रिंक से सेवन से मोटापा, भूख न लगना, दांत खराब होना जैसी स्वास्थ्य समस्याएं उत्पन्न हो सकती हैं। इसलिए जितना हो सके इन पेय पदार्थों से दूर रहें( 36 ), ( 37 ), ( 38 )।

संरक्षित या डिब्बाबंद खाद्य पदार्थ – जितना हो सके डिब्बाबंद खाद्य पदार्थ या फ्रोजेन मटर, मीट, मछली और ऐसी ही कई अन्य चीजों के सेवन से बचे। इसके सेवन से बोटुलिज्म नामक बीमारी हो सकती है। यह एक घातक बीमारी है जो क्लोस्ट्रीडियम बोटुलिनम नामक एक रोगाणु द्वारा उत्पन्न जहर के कारण होती है। अगर डिब्बाबंद खाद्य पदार्थ सही तरीके से न रखा गया हो तो इस बीमारी के होने का खतरा बढ़ सकता है। इससे व्यक्ति के जान भी जा सकती है( 39 )।

अल्कोहल – जितना हो सके अल्कोहल के सेवन से बचे। लगातार अल्कोहल का किया गया सेवन कैंसर, हृदय रोग मधुमेह जैसी घातक बीमारियों का कारण बन सकता है( 40 )।

तेल-मसाले वाले खाद्य पदार्थ – जितना हो सके तेल मसाले वाले खाद्य पदार्थों के सेवन से बचे। इनके लगातार सेवन से कई तरह की जानलेवा बीमारी हो सकती है, जैसे – कैंसर, ह्रदय रोग, सांस संबंधी समस्या( 41 )।
