Your indirect competitors are those who fulfill a different need for the same target market, or those who fulfill the same need for a different target market. An example of an indirect competitor could be a nearby coffee shop.

In your plan, name and describe your direct competitors individually, and explain what sets your bakery apart from them. Create a more general category for your indirect competitors and discuss them as a whole.

Finally, detail your areas of competitive advantage and what will make you distinct. Most successful bakery owners identify products that no other local bakeries offer, such as a treat that is exclusive to your bakery and that drive customers to frequent your store. Also, based on the demographics and psychographics discussed above, you may be successful being the only local bakery selling nut-free cakes, or making vegan and gluten-free baked goods with local and organic ingredients.

Management Team

This section provides biographies of the key members of your company’s management team, with an emphasis on strong business skills. Focus on educational background, previous experience with successful start-ups, and other elements that demonstrate your and/or your team’s ability to build a company. A strong advisory board can help make up for weaknesses provided you clearly articulate how your advisors will directly impact the company’s growth.

Financial Plan

The financial plan is often the most difficult part of the business plan to write, yet it is the section that potential investors and lenders spend the most time analyzing.

Provide a list of all revenue streams, including their relative importance and timeline for implementation, as well as the amount and expected sources of outside funding. Include a summary of past (if applicable) and projected Income Statements, Balance Sheets, and Cash Flow Statements. The assumptions made in these documents must be reasonable and verifiable based on an analysis of similar companies.

Make sure you don’t miss anything when putting together your financial projections or you could lose credibility in the eyes of readers of your plan. For example, make sure you adequately enter costs which most bakeries incur such as space (owned or rented), equipment (planetary mixers, cylinders, gas stove, cooling fridge, deep fridge, storage utensils, etc.), electricity and water, staff, furniture and dĂ©cor, licenses, insurance and legal fees.

If I was to name my personal heaven in Moscow, then I'd most certainly mention this place. Not only it offers best bakery (from various fresh bread loafs to buns and cookies), but also some delicious options for a light lunch. People flood in and... out, and sometimes it's hard to get a table inside; however, most of food is available for takeaway. Delivery is available, and you can order most of sweets and bakery goods via their site. Staff is always polite and welcoming, and they can recommend you some good treats to your taste. Volkonsky is also connected to some charities, and you can ask cashier for further details. More

I love this place - they have a huge selection of pastries and a breakfast menu for your usual fare of eggs, cheeses and bacon, etc. I had their fried eggs with toast, a cup of hot kakao and an almond croissant to go -... absolutely delicious. Rather expensive - what to expect from boulangerie which brings its flour from France! it is a franchise of the French chain Maison Kayser. The quality is good. One of the first to introduce mid-priced macaroons - ready for take out. And many other stuff... like bread and pastries. Open 24/7. More

Cosy, homely, elegant, cushy cake shop. Here everything is build into one; it's a cake shop/restaurant with different style of chairs and inviting. To top it up the cakes are delicious, i'll pay another visit in May when i am back in Moscow

I spent my two breakfasts in this sweet cafe. Lovely people are working here and YouÂŽll get a great omelet and the chocolate croissant was the best IÂŽve ever get. So I recommend this cafe to start Your Moscow-expedition!

Not a big fan of the cafe (the sandwiches, while reasonably priced, are mediocre), but do love the baked goods here. The loaf of cheese bread is, in a word, sublime. Grab that plus 200 grams of the chocolate chip cookies and you're good to... go. More

This bakery/coffee shop is comfortable and cozy. The coffees are really not bad. The buns and cookies are delicious, and I'd even say they are more flavorful and less greasy than the similar ones (croissants; danishes) from that mega-popular Brothers Karavaevs bakery.

Very cozy place, delicious food, moderate prices, good service - love it! Been there 2 times and will go there again!

Jarosch Bakery merging in a move owners say will preserve business for generations

Jarosch Bakery , a Northwest suburban institution for lovers of coffee cake, butter cookies and other sweets for more than six decades, is merging with a Chicago bakery in a move its owners say will preserve its future for generations to come.

Ken and Kathy Jarosch, whose family has owned the Elk Grove Village bakery since it opened in 1959, wrote in a letter to customers that the merger with Ideal Bakery comes as they begin to ponder retirement.

“Some bakeries decide to simply close the shop and walk away. The Jarosch’s did not want to see that happen,” the letter states. “After 64 years of baking, approaching 65 in October, and four generations of bakers going back to Germany, closing, and walking away was their last choice.”

In an interview Sunday, Ken Jarosch said Ideal’s operators intend to keep the Jarosch name on the Elk Grove bakery and continue producing its most popular items.

“I’m pretty sure they will also add to our product line,” he said.

According to the letter, Ideal Bakery was founded in the 1930s as a retail bakery and has since evolved to become a prominent Eastern European wholesale bakery throughout the Chicago area. It’s now owned by the Kowal and Klimek family, which the Jarosch’s describe as a tight-knit group who are young, eager, motivated and innovative in the bakery world.

“It is the Kowal/Klimek family’s goal to keep Jarosch Bakery the same, including the name,” the letter states. “They value the current staff, Jarosch customers, and the community. They look forward to making Elk Grove Village their new home.”

Ken Jarosch said he and Kathy are not yet retiring, and will work with the Kowal/Klimek family ahead of a planned move in late 2025 or early 2026 to a new 26,000-square-foot retail building along Higgins Road.

“We’ll be there every day, showing them how we do things,” he said.

The new building is part of Wingspan Development Group’s plan to redevelop the 10-acre Elk Grove Woods Plaza shopping center on the southeast corner of Arlington Heights and Higgins roads. Other existing tenants, including Tensuke Market and Vini's Pizza, also are expected to have new homes within the redevelopment.

“It is important to state that all the families involved appreciate the opportunity created by 
 Elk Grove Village to continue operating Jarosch Bakery at the current corner,” the letter states. “Without the foresight of the mayor, village manager, and the (village) board, Jarosch Bakery, as well as all the tenants of Elk Grove Woods Plaza, would not have the opportunity for a fresh look, fresh start, and the option of continuing their businesses.”

The Sweet Success of Phoenix Bakery

On weekends and major holidays in Los Angeles’ Chinatown, you commonly see customers lining up outside Phoenix Bakery on North Broadway, waiting to buy such traditional sweets and baked items as almond cookies, sugar butterflies, and winter melon pastries, as well as the bakery’s signature strawberry whipped-cream cake. For 86 years, Phoenix Bakery’s confections have been featured in the celebrations of countless birthday parties, weddings, and other festive occasions.

The bakery’s iconic logo of a Chinese boy hiding a box of sweets behind his back is one of the most recognizable landmarks in LA’s Chinatown, and it is a lasting symbol of Chinese American art, food culture, and community endurance. In April 2023, Kathryn Chan Ceppi, CEO of Phoenix Bakery and one of its second-generation owners, donated the bakery’s historical archive to The Huntington. No, you will not find the recipe for its strawberry cake among the items, but researchers can trace the bakery’s history through the correspondence, photographs, architectural drawings, and ephemera in the collection.

In 1938, Fung Chow “F.C.” Chan and his wife, Wai Hing Chan, founded Phoenix Bakery on the northwest corner of Broadway and Alpine Street in Chinatown. Born in China in 1909, F.C. Chan came to the United States in 1933 to study business administration at USC. He later joined his father to sell Chinese antiques to American customers. But World War II intervened, creating logistical issues that forced F.C. Chan to pivot his business toward selling baked goods and sweets to the Chinese American community in Southern California.

Phoenix Bakery was one of the first Chinese American–owned bakeries to sell Chinese- and Western-style pastries in the region. The bakery’s initial success—powered by its popular almond cookies—meant it soon outgrew its original location. In 1941, F.C. Chan signed a lease agreement with prominent Chinese American lawyer Y.C. Hong and relocated Phoenix Bakery to the Central Plaza of the recently established New Chinatown. F.C. Chan’s younger brother, Lun F. Chan, a World War II veteran who had studied baking techniques in Hong Kong and Los Angeles, joined the business as head baker in the 1940s. Many of the bakery’s signature pastries were developed under the stewardship of Lun F. Chan, who creatively blended Cantonese and Western baking traditions.

In the 1940s, Phoenix Bakery commissioned Chinese American artist Tyrus Wong (1910–2016), who had painted the dragon mural in New Chinatown’s Central Plaza, to create its logo design. The result was a shy-looking, potbellied boy dressed in pink, turquoise, and purple hanfu (traditional Chinese-style clothing), with his hair partially shaved and twisted into knots, hiding a box of Phoenix Bakery sweets behind his back. The boy was christened Sing Song, and this mischievous and playful mascot has adorned Phoenix Bakery, along with the slogan “Sweets for the Sweet,” ever since.

Ceppi recalls bumping into Wong at a restaurant many years ago, and he proudly showed her the Phoenix Bakery watch that he had received from the Chan family decades before. “He was not only an extraordinary, gifted artist but a humble and gracious person with a great sense of humor,” Ceppi said.

Continuing its tradition of working with local talent in the Chinese community, Phoenix Bakery commissioned LA-based architect Gilbert Leong (1911–1996) in 1975 to design a custom-built bakery at 969 N. Broadway. In 1936, Leong had become the first Chinese American to graduate from the USC School of Architecture. A prolific architect, he helped shape postwar LA architecture through his designs of numerous public buildings, commercial spaces, and private homes. His new building for Phoenix Bakery featured Chinese decorative motifs set in a contemporary and functional structure, while preserving and incorporating Wong’s Sing Song logo design. Fully owned by Phoenix Bakery, the new building alleviated rising rental costs resulting from gentrification and allowed the business to expand. The building also became an architectural landmark in one of the most historic Chinese American communities in the city.

Today, Phoenix Bakery is run by a dedicated group of children and grandchildren of F.C. Chan, who died in 2001, and Lun F. Chan, who died in 2016. Even though several of the second- and third-generation family members lead professional and personal lives outside the bakery, they pitch in whenever they can to ensure that it continues to serve its beloved strawberry whipped-cream cake and other specialties to patrons across Southern California and beyond.

Phoenix Bakery’s historical archive at The Huntington offers scholars insight into the formative years of Los Angeles’ New Chinatown and chronicles the bakery’s outsized impact as a gathering place for generations of Angelenos. In addition, the collection bears witness to the Chan family’s enduring legacy as influential leaders in the Chinese American community.

Soviet cakes named after cities of the world

Until recently, you could find the swanky Prague Restaurant on Old Arbat Street in Moscow. It was famous, first and foremost, for its cakes. This was where in the 1950s and 1960s its head pastry chef, Vladimir Guralnik, created the recipes for what would become themost popular Soviet desserts. These included Bird's Milk Cake, Wenceslas Cake and the Czech Roll—desserts that are familiar to anyone born in the Soviet Union. And, of course, there was the legendary Prague Cake, named after the Czech capital, which is where Guralnik studied confectionary-making in his youth. It still remains one of the most popular desserts in Russia and across the former USSR.

The funnything is that the city of Prague doesn't actuallyhave such a cake. In taste, it is most similar to Austria's Sachertorte, but the recipe is different. Prague Cake is simpler and uses condensed milk. It consists of chocolate sponge layers spread with apricot jam and chocolate butter cream and is then coated with a delicate chocolate glaze. And there is no liqueur in the Soviet cake, although homemade versions come in different variations.

Kievsky Cake

This light nutty meringue cake was invented at a Kiev confectionary factory in 1956. The recipe was devised by Konstantin Petrenko and Nadia Chernogor. Nadia was just 17 at the time and had just begun studying confectionery making. One timeshe forgot to put some egg whites in the fridge and, to avoid being told off for wasting food products, she used them to make cakes with a layer of butter cream. Before long, her invention went into wide scale production, and the cake was named after the capital of the Ukraine.

Minsky Cake

This fruit shortcake is named after the capital of Belarus, where it has been produced since the 1970s. But it is more popularly known as Little Mushrooms Cake or Autumn Cake since it looks like a forest clearing that’s decorated with "mushrooms" made from white butter cream and green "leaves." These days you won't see it so often, but practically every shop or cafe offers a smaller version of Minsk Cake – short crust tartlets topped with "little mushrooms."

Warsaw and Krakow Cakes

In the mid-1950s at least two cakes named in honor of Poland made their appearance in the USSR. Poland was one of the key members of the Warsaw Pact . 

The cakes were virtually identical. Krakow Cake was a short crust rectangle topped with almond meringue, and Warsaw Cake was the same but included fruit jam between the layers. Sadly, and undeservedly, these delicious cakes have been largely forgotten today.

Leningradsky Cake

This was one of the most beloved Soviet cakes, and everyone with a sweet tooth was always on the lookout for it. Its recipe was approved in the early 1960s. It is believed that it was meant to compete with Kievsky Cake and therefore was named after the great city of Leningrad (now St. Petersburg).

The cake consists of layers of shortcake and chocolate buttercream that are injected with brandy. The top of the cake is decorated with buttercream flowers and chocolate fondanticing. In Soviet times, it was so popular that is would sell out as soon as it appeared in the shops! But today you can buy and taste this legendary cake in many cities across Russia.

Bonus: Moskva Cake

Quite a few of dishes, ranging from salads to sweet buns, were named after the Soviet capital. And in the early 1950s, the city acquired a Moscow-branded raisin cake with powdered sugar. The cake was even included in the space diet for cosmonauts.

There was also a gateau-type Moscow Cake consisting of three layers of sponge steeped in chocolate and strawberry buttercream. But this wasn't as popular as the Leningradsky or Prague cakes and has largely been forgotten altogether. As a result, until recently Moscow was left without a cake bearing its name!

It was only in 2015 that Moscow pastry chefs decided to rectify this injustice. They devised several cakes and asked Muscovites to choose which wasbest. In the end, 200,000 people voted for this one, made with hazelnut layers and condensed milk. Today you can try it in any Moscow cafe, pick it up in a store or even make it yourself.
